6 slice bacon, chopped
12 brown mushrooms, sliced
1/2 cup sage leaves
4 cloves garlic, crushed
1/4 cup olive oil
8 eggs
1 1/2 cups cream
1/2 cup grated parmesan
salt and pepper to taste
Preheat the oven to 400°. Place the bacon, mushrooms, sage, garlic and oil in a baking sheet large enough to accomodate everything in one layer, toss to combine. Roast for 15-20 minute until golden. Whisk together the eggs, cream, parmesan salt and pepper pour over the bacon and mushroom mixture. Bake for 15-20 until puffed and golden.
P.S. Mushrooms will give out a lot of water when roasted, will delete the bacon to get nice and crispy. Would be a good idea to roast the bacon separately.
