
Green garlic is simply immature garlic and looks like a slightly scallion or green onion. Usually, garlic is harvested in the middle of summer. Green garlic, is harvested before the plant is mature. The flavor of green garlic is still garlicky, but is much more mild.
When cooked, the green garlic sweetens, great with soups, eggs, pasta, fish, and chicken. Available from now through mid-May, possibly into early June at your local farmers market or specialty store.
